Scotch Scones

These scones from Scotland are traditionally served at afternoon tea or “threesies.”

Ingredients

3 cups flour
1 teaspoon baking soda
1/2 cup plus 2 tablespoons sugar
3/4 teaspoon salt
1/4 cup butter
1/4 cup lard
1 egg, lightly beaten
2/3 cup milk

Recipe preparation

Combine the flour, baking soda, sugar and salt in a bowl. Cut in the butter and lard. Beat the egg with the milk in a bowl. Add to the flour mixture, cutting in quickly with a knife. Shape the dough into a ball; divide into 2 equal portions. Roll each portion 1/2 inch thick on a lightly floured surface. Cut into 4 equal portions. Heat a skillet over medium-high heat. Dust with flour. Cook the scones for 5 minutes or until browned on each side, turning once. Repeat with the remaining dough, wiping skillet and re-flouring between batches.
