Pancit Bihon Guisado

This classic noodle dish reflects the culinary diversity of the Philippines. Pancit may be served alone for a light meal or alongside main dishes.

Ingredients

2 packages rice noodles
1/4 cup dried mushrooms
1 cup pork strips
3 garlic cloves, crushed
1/2 cup sliced onion
2 tablespoons vegetable oil
1/2 cup shelled shrimp 
1/4 cup Chinese sausage, thinly sliced
1/2 cup cabbage strips
1/2 cup carrot strips
1/4 cup chopped celery
1/2 cup soy sauce

Recipe preparation

Soak the noodles in water for 10 to 15 minutes or until slightly softened; drain and set aside. Soak the mushrooms in water to soften. Cut into strips and set aside. Sauté the pork strips, garlic and onion in the oil in a large skillet until the pork begins to lose its pinkness. Cut the shrimp into halves lengthwise. Add the shrimp, sausage and mushrooms. Sauté until the shrimp turn pink. Add the cabbage, carrot, and celery. Stir-fry until the vegetables are tender-crisp. Add the noodles, soy sauce, salt and pepper to taste. Stir-fry until the noodles are tender. Serve garnished with lemon juice.
